    Prepare the Fondant Potatoes

    Peel the potatoes and cut them into thick rounds. In a saucepan, heat 1 tablespoon of olive oil and 1 tablespoon of butter over medium heat. Add the potatoes and sear until golden brown on both sides. Add enough vegetable stock to cover half of the potatoes, cover, and cook on low heat for about 20 minutes until tender.

    Cook the Bacon

    In a skillet, cook the smoked bacon over medium heat until crispy. Remove and drain on paper towels. Reserve the bacon fat in the skillet.

    Prepare the Ramp Gremolata

    Finely chop the ramps and mix with lemon zest, salt, and black pepper in a small bowl. Set aside.

    Sear the Scallops

    In the same skillet with reserved bacon fat, increase the heat to high. Add the scallops and sear for 2-3 minutes on each side until golden brown. Season with salt and black pepper.

    Combine and Serve

    On a plate, arrange the fondant potatoes, topped with sweet corn kernels, and place the seared scallops on top. Crumble the crispy bacon over the dish and finish with a sprinkle of ramp gremolata.
