    Prepare the Flageolet Beans

    Rinse the flageolet beans under cold water. Soak them in water overnight, then drain. In a medium pot, cover the beans with fresh water, bring to a boil, and reduce to a simmer. Cook for about 45 minutes or until tender. Drain and set aside.

    Prepare the Vegetables

    Chop the summer squash and market tomatoes into bite-sized pieces. Mince the garlic and roughly chop the fresh basil.

    Sauté the Vegetables

    In a large skillet, heat the olive oil over medium heat. Add minced garlic and sauté for 1 minute until fragrant. Add the chopped summer squash and tomatoes. Season with salt and black pepper. Cook for about 5-7 minutes until the vegetables are tender.

    Cook the Sea Bass

    Push the vegetables to the side of the skillet and add the California sea bass fillets. Season the fish with salt, pepper, and lemon juice. Cook for about 4-5 minutes on each side, or until the fish is cooked through and flakes easily with a fork.

    Combine and Serve

    Once the fish is cooked, gently fold in the flageolet beans and fresh basil into the skillet. Cook for an additional 2 minutes to heat through. Adjust seasoning if necessary and serve immediately.
