    Preheat Oven

    Preheat the oven to 425°F (220°C).

    Mix Dry Ingredients

    In a large bowl, whisk together the flour, baking powder, baking soda, and salt.

    Cut in Butter

    Add the cold, cubed butter to the flour mixture. Use a pastry cutter or your fingers to cut the butter into the flour until it resembles coarse crumbs.

    Add Buttermilk

    Pour in the buttermilk and stir until just combined. Do not overmix.

    Shape and Cut

    Turn the dough out onto a floured surface and gently knead it a few times until it comes together. Pat it into a rectangle about 1-inch thick. Cut out biscuits using a biscuit cutter or a glass.

    Place the biscuits on a baking sheet and bake for 12-15 minutes, or until they are golden brown.

For the Honey Butter

    In a small bowl, combine the softened butter and honey. Mix until well blended and creamy.

    In a medium saucepan, combine the mixed berries, sugar, and lemon juice. Cook over medium heat until the berries break down and the mixture thickens, about 10-15 minutes.
