Brewing Process

    Mashing

    Heat 5 gallons of water to 165°F (74°C). Add the crushed grains and maintain a temperature of 150°F (65°C) for 60 minutes.

    Sparging

    After mashing, sparge with hot water until you collect 6.5 gallons of wort.

    Boiling

    Bring the wort to a boil. Add 2 oz of Chinook hops at the beginning of the boil and 1 oz of Cascade hops with 15 minutes remaining in the boil. Boil for a total of 60 minutes.

    Cooling and Fermentation

    Cool the wort quickly to 70°F (21°C) and transfer to a fermenter. Pitch the American Ale yeast and ferment for 1-2 weeks.

    Bottling

    After fermentation, bottle with priming sugar to carbonate. Let it condition for 2 weeks.
