Crust Preparation

    Make the Crust

    In a mixing bowl, combine flour, sugar, and salt. Add softened butter and mix until crumbly. Stir in egg yolks and vanilla extract until dough comes together.

    Chill the Dough

    Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.

    Pre-Bake the Crust

    Preheat oven to 350°F (175°C). Roll out the chilled dough and fit it into a pie dish. Prick the bottom with a fork. Bake for 15-20 minutes until golden. Let it cool.

Filling Preparation

    Prepare the Filling

    In a large mixing bowl, beat cream cheese until smooth. Gradually add sugar, sour cream, vanilla, lemon zest, and lemon juice. Mix until well combined.

    Add Eggs

    Add eggs one at a time, mixing well after each addition until smooth.

    Pour into Crust

    Pour the filling into the pre-baked crust and smooth the top.

    Bake the Pie

    Bake in preheated oven for 45-50 minutes, or until the center is set but slightly jiggly. Remove from oven and cool completely.

    In a small bowl, toss mixed berries with powdered sugar and let sit for 10 minutes to macerate.

    Top the cooled pie with the berry mixture and garnish with fresh mint leaves before serving.
