    Prepare the Calamari

    Clean the fresh calamari thoroughly. Cut the bodies into rings and leave the tentacles whole. Place the calamari in a bowl and cover with buttermilk. Let it marinate in the refrigerator for at least 1 hour.

    In a separate bowl, mix together the all-purpose flour, cornstarch, salt, black pepper, paprika, garlic powder, and cayenne pepper until well combined.

    In a deep, heavy-bottomed pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Coat the Calamari

    Remove the calamari from the buttermilk and let the excess drip off. Dredge the calamari in the flour mixture, ensuring each piece is well-coated.

    Carefully add the coated calamari to the hot oil in batches, being cautious not to overcrowd the pot. Fry for about 2-3 minutes, or until golden brown and crispy. Use a slotted spoon to remove them and place on a paper towel-lined plate to drain excess oil.
