Base Layer

Method

Base Layer Preparation

  1. 1

    Make the crust

In a medium bowl, combine graham cracker crumbs, granulated sugar, and melted butter. Mix until the crumbs are well-coated and the mixture resembles wet sand.

  2. 2

    Form the crust

Press the crumb mixture firmly into the bottom of a 9-inch springform pan to create an even layer. Use the back of a measuring cup to pack it down tightly.

  3. 3

    Bake the crust

Preheat your oven to 350°F (175°C) and bake the crust for 8-10 minutes until lightly golden. Remove from the oven and let cool.

Peach Filling Preparation

  1. 4

    Prepare the peaches

In a large bowl, combine the diced peaches, granulated sugar, lemon juice, cornstarch, and ground cinnamon. Toss gently until the peaches are evenly coated.

  2. 5

    Fill the crust

Pour the peach mixture over the cooled crust, spreading it out evenly.

  3. 6

    Bake the filling

Return the pan to the oven and bake for 30-35 minutes, or until the peaches are bubbly and soft. Remove from the oven and let cool completely.

Topping Preparation

  1. 7

    Make the cream topping

In a medium bowl, beat the softened cream cheese with an electric mixer until smooth. Gradually add in the powdered sugar and vanilla extract, mixing until combined.

  2. 8

    Fold in whipped cream

Gently fold in the whipped cream until the mixture is smooth and fluffy. Be careful not to deflate the whipped cream.

  3. 9

    Top the peach filling

Spread the cream cheese mixture evenly over the cooled peach filling in the springform pan. Smooth the top with a spatula.
