Preparing the Steaks

    Seasoning the Steaks

    Start by taking the ribeye steaks out of the refrigerator and letting them come to room temperature for about 30 minutes. Pat them dry with paper towels. In a bowl, mix together salt and black pepper. Generously season both sides of each steak with the salt and pepper mixture.

    Searing the Steaks

    Heat a large cast-iron skillet or grill over medium-high heat. Add the olive oil and let it heat until it shimmers. Place the seasoned steaks in the skillet or on the grill and sear for 4-5 minutes on each side for medium doneness, or until they reach an internal temperature of 135°F (57°C).

    Adding Flavor

    During the last minute of cooking, add the crushed garlic cloves and fresh rosemary to the skillet or grill. Spoon the oil over the steaks to infuse them with flavor.

    Resting the Steaks

    Once cooked, remove the steaks from the heat and transfer them to a cutting board. Cover loosely with aluminum foil and let them rest for 5-10 minutes before serving.

    Baking the Potatoes

    Preheat the oven to 425°F (220°C). Scrub the baked potatoes under running water and pierce them with a fork a few times. Rub them with olive oil and sprinkle with salt. Place on a baking sheet and bake for 45-60 minutes, or until they are tender when pierced with a fork.

    Steaming the Asparagus

    While the potatoes are baking, bring a pot of water to a boil. Add the asparagus and steam for about 3-5 minutes, until tender but still crisp. Drain and set aside.

    Preparing Creamy Garlic Sauce

    In a small saucepan, combine garlic, cream, and a pinch of salt over medium heat. Simmer for 5-7 minutes until the sauce thickens slightly. Stir in fresh herbs if desired.
