    Prepare the Fritter Mixture

    In a large mixing bowl, combine the goat cheese and cream cheese. Use a fork or hand mixer to blend until smooth.

    Add Vegetables and Seasoning

    Stir in the diced pimiento peppers, finely chopped jalapeño, and chopped green onions into the cheese mixture. Mix well.

    Incorporate Dry Ingredients

    In a separate bowl, whisk together the flour, cornmeal, baking powder, salt, and black pepper. Gradually add this dry mixture to the cheese mixture, mixing well to combine.

    Add Egg

    Crack the egg into the mixture and stir until fully incorporated.

    Heat Oil

    In a deep frying pan, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Fry the Fritters

    Using a spoon or small ice cream scoop, drop spoonfuls of the fritter mixture into the hot oil. Fry until golden brown, about 3-4 minutes on each side. Remove and drain on paper towels.

    In a large saucepan, combine the chopped jalapeños, granulated sugar, apple cider vinegar, and salt. Stir until well mixed.

    Bring the mixture to a boil over medium-high heat, stirring frequently. Once boiling, stir in the pectin and bring back to a boil for 1-2 minutes.

    Remove from heat and pour the jelly into sterilized jars. Seal tightly and let cool at room temperature.
