Method

Crust Preparation

  1. 1

    Prepare the crust

Preheat your oven to 350°F (175°C). In a medium mixing bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Mix well until all crumbs are moistened.

  2. 2

    Form the crust

Press the mixture firmly into the bottom of a 9-inch springform pan to form an even crust. Bake in the preheated oven for 10 minutes. Remove from oven and let cool while preparing the filling.

Filling Preparation

  1. 3

    Mix the filling

In a large mixing bowl, beat the softened cream cheese with a hand mixer until smooth. Gradually add in granulated sugar and continue to beat until creamy.

  2. 4

    Add remaining ingredients

Add vanilla extract, sour cream, and eggs one at a time, mixing well after each addition to ensure a smooth batter.

  3. 5

    Pour the filling

Pour the cream cheese filling into the cooled crust, spreading it evenly. Tap the pan on the counter to remove any air bubbles.

  4. 6

    Bake the dessert

Bake in the oven for 50-60 minutes, or until the center is set and slightly jiggly. Turn off the oven and leave the cheesecake inside for 1 hour to cool gradually.

  5. 7

    Chill

After the hour, remove from the oven and cool to room temperature. Refrigerate for at least 4 hours or overnight.

Topping Preparation

  1. 8

    Prepare the strawberries

In a medium bowl, combine sliced strawberries, granulated sugar, and lemon juice. Toss gently to coat the strawberries.

  2. 9

    Chill the topping

Let the strawberries sit for about 15-20 minutes to macerate and release their juices.

Serving

  1. 10

    Serve the dessert

Once the cheesecake is chilled, carefully remove it from the springform pan. Top with the macerated strawberries before serving. Enjoy!
