Preparation of Gelato Base

    Combine Milk and Cream

    In a medium saucepan, combine 2 cups of whole milk and 1 cup of heavy cream. Heat over medium heat until the mixture is warm but not boiling.

    Whisk Egg Yolks and Sugar

    In a large bowl, whisk together 4 large egg yolks and 3 tablespoons of granulated sugar until the mixture is pale and slightly thickened.

    Temper Egg Mixture

    Slowly pour the warm milk and cream mixture into the egg yolk mixture, whisking constantly to prevent curdling.

    Cook the Mixture

    Pour the combined mixture back into the saucepan and cook over medium-low heat, stirring constantly, until it thickens enough to coat the back of a spoon (about 5-7 minutes).

    Add Vanilla

    Remove from heat and stir in 1 teaspoon of vanilla extract. Allow the mixture to cool at room temperature, then refrigerate until chilled (at least 2 hours).

Flavoring and Churning

    Flavor the Base

    Once the base is chilled, you can add your desired flavoring. For chocolate gelato, stir in 1 cup of chocolate syrup; for fruit gelato, fold in 1 cup of fresh fruit puree; for Nutella gelato, blend in 1 cup of Nutella; or for matcha gelato, whisk in 2 teaspoons of matcha powder.

    Churn the Gelato

    Pour the flavored mixture into an ice cream maker and churn according to the manufacturer's instructions until it reaches a soft-serve consistency (usually about 20-30 minutes).

    Freeze the Gelato

    Transfer the gelato to an airtight container and freeze for at least 4 hours or until firm.
