Shrimp Parmigiana Vodka Sauce Recipe

Pasta Preparation

    Cook the Pasta

    In a large pot of boiling salted water, cook the spaghetti or linguine according to package instructions until al dente. Drain and set aside.

Shrimp Preparation

    Sauté the Shrimp

    In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add minced garlic and red pepper flakes, and sauté for about 1 minute until fragrant. Add the shrimp, season with salt and pepper to taste, and cook until they turn pink and opaque, about 3-4 minutes. Remove the shrimp and set aside.

Vodka Sauce Preparation

    Make the Vodka Sauce

    In the same skillet, add 1 tablespoon of olive oil and heat over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Stir in minced garlic and cook for an additional 1 minute.

    Add Tomato Sauce and Vodka

    Pour in the tomato sauce and vodka, stirring to combine. Simmer for 5 minutes to reduce slightly.

    Finish the Sauce

    Reduce the heat to low and stir in the heavy cream, grated Parmesan cheese, and fresh basil. Season with salt and pepper to taste. Allow to simmer for another 5 minutes.

Combine and Serve

    Combine Pasta and Shrimp

    Add the cooked pasta and sautéed shrimp to the vodka sauce, tossing gently to combine and heat through.

    Add Toppings

    Sprinkle the mozzarella cheese and additional Parmesan cheese on top. Cover and cook until the cheese is melted, about 2-3 minutes.

    Garnish and Serve

    Remove from heat, garnish with fresh basil leaves, and serve immediately.
