Method
Crust
- 1
Prepare the crust
Preheat your oven to 350°F (175°C). In a medium bowl, combine the graham cracker crumbs and granulated sugar. Pour in the melted butter and mix until the crumbs are evenly coated and the mixture resembles wet sand.
- 2
Shape the crust
Press the crumb mixture firmly into the bottom and up the sides of a 9-inch pie pan. Make sure it is packed tightly and evenly.
- 3
Bake the crust
Bake in the preheated oven for 8-10 minutes or until lightly golden. Remove from the oven and let cool while you prepare the filling.
Filling
- 4
Mix the filling
In a large mixing bowl, whisk together the sweetened condensed milk and key lime juice until smooth.
- 5
Add egg yolks
Add the egg yolks to the mixture and whisk until fully combined and smooth.
- 6
Pour into crust
Pour the filling mixture into the cooled crust, spreading it evenly.
- 7
Bake the pie
Bake the pie in the oven at 350°F (175°C) for 15 minutes. Remove from the oven and let it cool to room temperature, then refrigerate for at least 3 hours or until set.
Topping
- 8
Whip the cream
In a mixing bowl, pour in the heavy whipping cream and add powdered sugar. Using an electric mixer, beat on medium-high speed until soft peaks form.
- 9
Finish the topping
Gently fold in the lime zest with a spatula until just combined.
- 10
Top the pie
Once the pie has set, spread the whipped cream mixture over the top evenly. You can also pipe it for a decorative touch.
