Garlic & Oil Shrimp Over Pasta Recipe

Pasta Preparation

    Cook the Pasta

    Bring a large pot of salted water to a boil. Add the spaghetti or linguine and cook according to the package instructions until al dente, typically about 8-10 minutes.

    Drain the Pasta

    Once the pasta is cooked, reserve about 1/2 cup of the pasta cooking water, then drain the rest and set the pasta aside.

Shrimp Preparation

    Sauté the Garlic

    In a large skillet, heat the olive oil over medium heat. Add the minced garlic and red pepper flakes, sautéing for about 1-2 minutes until fragrant, being careful not to burn the garlic.

    Cook the Shrimp

    Add the shrimp to the skillet, seasoning with salt and black pepper. Cook for about 3-4 minutes, stirring occasionally, until the shrimp turn pink and are cooked through.

    Add Lemon Juice and Parsley

    Stir in the lemon juice and chopped parsley into the shrimp mixture, combining well. If the mixture seems dry, add a little reserved pasta water to loosen it up.

Combine and Serve

    Combine Pasta and Shrimp

    Add the drained pasta to the skillet with the shrimp. Toss everything together until the pasta is well coated with the garlic and oil mixture.

    Serve
