Calamari Preparation

Clean the Calamari
Rinse the fresh calamari under cold water. Remove the head, tentacles, and innards. Slice the body into rings about 1/2 inch thick.

Make the Batter
In a large bowl, combine the all-purpose flour, cornstarch, salt, black pepper, paprika, and garlic powder. Mix well.

Prepare the Calamari
Add the calamari rings to the batter mixture and toss to coat evenly. Add lemon juice and ice water to create a light batter. Mix until just combined.

In a large, deep skillet or frying pan, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Once the oil is hot, carefully drop the battered calamari rings into the oil in small batches. Do not overcrowd the pan. Fry for about 2-3 minutes or until golden brown.
