Method

Pasta Preparation

  1. 1

    Cook the Linguine

Bring a large pot of salted water to a boil. Add the linguine and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta and set aside.

Clam Sauce Preparation

  1. 2

    Sauté Aromatics

In a large skillet, heat the olive oil over medium heat. Add the minced garlic and diced shallots. Sauté for about 2-3 minutes until fragrant and softened.

  2. 3

    Add Clams and White Wine

Pour in the white wine and add the fresh clams. Cover the skillet and let the clams steam for about 5-7 minutes, or until they have opened. Discard any that do not open.

  3. 4

    Finish the Sauce

Once the clams are cooked, add the red pepper flakes and black pepper to taste. Stir in the chopped parsley and mix well.

Combine and Serve

  1. 5

    Combine Pasta and Clam Sauce

Add the cooked linguine to the skillet with the clam sauce. Toss gently to combine, adding reserved pasta water a little at a time to reach desired consistency.

  2. 6

    Serve

Serve the clam linguine hot, garnished with additional parsley if desired.
