Preparation

    Prepare the Vegetables

    Chop the onion, celery, and dice the potatoes into small cubes.

    Open the Canned Clams

    Drain the clams and reserve the juice to use in the chowder.

Cooking

    Sauté the Vegetables

    In a large pot, melt the butter over medium heat. Add the chopped onion and celery, sautéing until they are soft, about 5 minutes.

    Add Potatoes and Clam Juice

    Stir in the diced potatoes and the reserved clam juice. Bring to a boil, then reduce the heat and let simmer for 15 minutes or until the potatoes are tender.

    Add Clams and Seasonings

    Once the potatoes are tender, add the drained clams, heavy cream, milk, thyme, bay leaf, salt, and black pepper. Stir well and cook for an additional 5 minutes.

Serving

    Serve the Chowder

    Remove the bay leaf from the chowder. Ladle the clam chowder into bowls and garnish with chopped parsley and oyster crackers on the side.
