Mousse Preparation

Melt Chocolate and Butter
In a heatproof bowl, combine the dark chocolate and unsalted butter. Set the bowl over a pot of simmering water (double boiler) and stir until melted and smooth. Remove from heat and let cool slightly.

Whisk Eggs and Sugar
In a separate bowl, whisk the large eggs and granulated sugar together until the mixture is pale and slightly thickened, about 3-5 minutes.

Combine Mixtures
Add the melted chocolate mixture to the egg mixture. Stir gently until fully combined. Add the vanilla extract and a pinch of salt, mixing until smooth.

Whip Egg Whites
In a clean bowl, beat the remaining egg whites until soft peaks form. Gradually add a tablespoon of sugar, continuing to beat until stiff peaks form.

Fold in Egg Whites
Gently fold the whipped egg whites into the chocolate mixture a third at a time, being careful not to deflate the mixture.

Chill the Mousse
Spoon the mousse into individual serving dishes and refrigerate for at least 2 hours or until set.

Whip the Cream
In a mixing bowl, combine the heavy cream, powdered sugar, and vanilla extract. Using an electric mixer, whip until soft peaks form.

Serve
Once the mousse has set, top each serving with a dollop of whipped cream. Optionally, garnish with chocolate shavings or berries.
