Method

Preparation

  1. 1

    Mix Dry Ingredients

In a large mixing bowl, combine the all-purpose flour, baking powder, and salt. Whisk them together until well mixed.

  2. 2

    Incorporate Lard

Add the lard or vegetable shortening to the dry ingredients. Use your fingers or a pastry cutter to work the fat into the flour until the mixture resembles coarse crumbs.

  3. 3

    Add Water

Gradually add the warm water to the mixture, stirring with a fork until a dough begins to form. You may need to adjust the water slightly depending on the humidity.

  4. 4

    Knead the Dough

Transfer the dough to a lightly floured surface and knead it for about 5 minutes until it becomes smooth and elastic.

Cooking

  1. 5

    Rest the Dough

Cover the dough with a clean kitchen towel and let it rest for at least 30 minutes. This relaxes the gluten and makes rolling easier.

  2. 6

    Divide the Dough

After resting, divide the dough into 8 equal pieces. Roll each piece into a ball and flatten into a disc.

  3. 7

    Roll Out the Tortillas

Using a rolling pin, roll out each disc into a thin circle, about 6-8 inches in diameter. Dust with flour as needed to prevent sticking.

  4. 8

    Cook the Tortillas

Heat a dry skillet or griddle over medium-high heat. Place one tortilla in the skillet and cook for about 30 seconds on each side, or until lightly browned and cooked through. Repeat for remaining tortillas.

  5. 9

    Keep Warm

As you cook each tortilla, keep them warm by stacking them on a plate and covering with a clean kitchen towel.
