Method

Marinating the Steak

    Prepare the Marinade

    In a medium bowl, combine olive oil, lime juice, minced garlic, ground cumin, chili powder, salt, and black pepper. Mix well to create a marinade.

    Marinate the Steak

    Place the flank steak in a shallow dish or resealable plastic bag. Pour the marinade over the steak, ensuring it is well coated. Seal the bag or cover the dish and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.

Cooking the Steak

    Heat the Grill or Skillet

    Preheat your grill or skillet over medium-high heat.

    Cook the Steak

    Remove the steak from the marinade and discard the marinade. Grill or sear the steak for about 5-7 minutes on each side, or until it reaches your desired level of doneness. For medium-rare, aim for an internal temperature of 135°F (57°C).

    Once cooked, remove the steak from the heat and let it rest for about 5 minutes. This allows the juices to redistribute.

    After resting, slice the steak against the grain into thin strips.

    In a dry skillet over medium heat, warm the corn tortillas for about 30 seconds on each side until pliable.
