Method

Preparing the Beans

  1. 1

    Soak the Pinto Beans

Place the pinto beans in a bowl, cover with water, and soak overnight or for at least 6-8 hours.

  2. 2

    Cook the Beans

Drain and rinse the soaked beans. In a large pot, combine the beans with 3 cups of fresh water. Bring to a boil, then reduce the heat and simmer for 1-1.5 hours until the beans are tender. Drain and set aside.

Cooking the Refried Beans

  1. 3

    Sauté the Vegetables

In a large skillet over medium heat, add the olive oil. Once hot, add the chopped onion and cook until translucent, about 5 minutes. Stir in the minced garlic and cook for an additional minute until fragrant.

  2. 4

    Mash the Beans

Add the cooked pinto beans to the skillet. Use a potato masher or fork to mash the beans to your desired consistency (smooth or chunky).

  3. 5

    Season the Beans

Stir in the cumin, salt, and black pepper. Adjust seasoning to taste. If the mixture is too thick, you can add a little water or broth to reach your desired consistency.

  4. 6

    Finish with Lime Juice

Remove the skillet from heat and stir in the lime juice. Mix well to combine all the flavors.
