    Cook the Chorizo

    In a skillet over medium heat, add the chorizo and cook until browned and cooked through, about 5-7 minutes. Break it apart with a spatula as it cooks.

    Prepare the Cheese Mixture

    In a mixing bowl, combine the Chihuahua cheese, Monterey Jack cheese, and Cotija cheese. Mix well until evenly combined.

    Prepare Jalapeño

    Finely chop the jalapeño pepper, removing seeds if you prefer less heat. Set aside.

    Chop Cilantro

    Rinse and chop fresh cilantro. Set aside for garnish.

Cooking

    Combine Ingredients

    In the skillet with the cooked chorizo, lower the heat to medium-low. Add the mixed cheese and chopped jalapeño to the skillet. Stir continuously until the cheese has melted and is smooth, about 3-5 minutes.

    Once the cheese mixture is fully melted and creamy, remove from heat. Transfer to a serving dish and garnish with chopped cilantro.

    In a separate skillet, warm the flour tortillas over medium heat for about 1 minute on each side until they are soft and pliable.
