Main Ingredients

Method

Preparation

  1. 1

    Prepare the Tomatillos

Remove the husks from the tomatillos and rinse them under cold water to remove any sticky residue. Cut them in half.

  2. 2

    Prepare the Jalapeño

Remove the stem from the jalapeño pepper. If you prefer less heat, remove the seeds and membranes. Otherwise, leave them intact for a spicier sauce.

  3. 3

    Chop the Onion

Peel and chop the onion into quarters.

  4. 4

    Peel the Garlic

Peel the garlic cloves and set them aside.

  5. 5

    Prepare the Cilantro

Wash the fresh cilantro and roughly chop it, discarding the thick stems.

Cooking

  1. 6

    Boil the Ingredients

In a medium pot, add the prepared tomatillos, jalapeño, garlic, and onion. Cover with water and bring to a boil over medium heat.

  2. 7

    Simmer

Once boiling, reduce heat and let it simmer for about 10-15 minutes until the tomatillos are soft and slightly translucent.

  3. 8

    Blend the Sauce

Remove the pot from heat and let it cool slightly. Transfer the mixture to a blender or food processor, along with the cilantro, lime juice, salt, and black pepper.

  4. 9

    Puree Until Smooth

Blend until smooth and adjust seasoning to taste, adding more salt or lime juice if desired.
