Preparation of Filling

    Prepare the Filling

    In a large bowl, combine the shredded cheese, cooked shredded chicken (or ground beef), chopped onions, and chopped cilantro. Mix well until all ingredients are evenly distributed.

Assembling Enchiladas

    Warm the Tortillas

    In a skillet over low heat, warm the corn tortillas for about 30 seconds on each side until they are pliable.

    Fill the Tortillas

    Place about 1/4 cup of the filling mixture in the center of each tortilla. Roll the tortilla tightly around the filling and place seam side down in a greased baking dish.

Saucing

    Prepare the Sauce

    In a saucepan, heat the enchilada sauce over medium heat. Add salt and ground cumin, stirring well to combine.

    Pour Sauce Over Enchiladas

    Once the sauce is heated, pour half of it evenly over the assembled enchiladas in the baking dish.

Baking

    Bake the Enchiladas

    Preheat your oven to 375°F (190°C). Cover the baking dish with foil and bake for 20 minutes. Remove the foil and bake for an additional 10 minutes until the cheese is bubbly and the enchiladas are heated through.

Serving

    Serve with Toppings

    Once baked, remove from the oven and allow to cool for a few minutes. Serve enchiladas topped with sour cream, chopped tomatoes, and sliced jalapeños.
