    Cook the Chorizo

    In a large skillet, heat the olive oil over medium heat. Add the chorizo sausage and cook, breaking it apart with a spatula, until it is browned and cooked through, about 5-7 minutes.

    Stir in the minced garlic and cook for an additional 1-2 minutes, until fragrant.

    Mix in Cream Cheese

    Reduce the heat to low and add the cream cheese to the skillet. Stir continuously until the cream cheese has melted and is well combined with the chorizo.

    Gradually mix in the shredded cheddar and Monterey Jack cheeses, stirring until they are completely melted and the mixture is creamy.
