Preheat your oven to 400°F (200°C). Place the poblano peppers on a baking sheet and roast in the oven for about 20-25 minutes, turning occasionally until the skin is blistered and charred.

Remove the peppers from the oven, place them in a plastic bag, and let them steam for about 10 minutes. This will make peeling the skins easier. After steaming, peel the skins off and make a slit down the side of each pepper to remove the seeds.

In a skillet over medium heat, add a tablespoon of olive oil. Sauté the chopped onion and minced garlic until translucent. Add the ground beef (or turkey), cumin, salt, and black pepper. Cook until the meat is browned and fully cooked. Remove from heat and stir in the cheese until melted. Let the filling cool slightly.

Stuff each roasted poblano pepper with the meat and cheese filling. Heat vegetable oil in a deep skillet over medium-high heat. Dip each stuffed pepper into the batter, allowing excess to drip off, and carefully place into the hot oil. Fry until golden brown on all sides, about 3-4 minutes per side. Remove and drain on paper towels.
