Chicken Quesadilla

    Cook the Chicken

    In a skillet, heat 1 tablespoon of olive oil over medium heat. Season the chicken breasts with salt, pepper, and cumin. Cook for about 6-7 minutes on each side until fully cooked. Remove from the skillet and shred the chicken.

    Assemble the Quesadilla

    In the same skillet, add another tablespoon of olive oil. Place one tortilla in the skillet, sprinkle half of the cheese over it, then add a portion of shredded chicken and sprinkle with cilantro. Top with another tortilla.

    Cook for about 3-4 minutes on each side until golden brown and the cheese has melted. Repeat with remaining ingredients.

    Cut into wedges and serve with sour cream and salsa.

Beef Tostada

    In a skillet, heat olive oil over medium heat. Add the ground beef and cook until browned, about 5-7 minutes. Drain excess fat.

Rice
