Chicken Flauta

Method

Chicken Flauta

  1. 1

    Prepare Filling

In a bowl, combine shredded cooked chicken with half of the shredded cheese. Mix well.

  2. 2

    Assemble Flautas

Take a corn tortilla, place 2-3 tablespoons of the chicken filling in the center, and roll tightly. Repeat for all tortillas.

  3. 3

    Fry Flautas

In a large skillet, heat vegetable oil over medium-high heat. Fry the rolled tortillas until golden and crispy, about 3-4 minutes on each side. Drain on paper towels.

  4. 4

    Serve

Serve hot with shredded lettuce, sour cream, and salsa on the side.

Beef Burrito

  1. 5

    Cook Beef

In a skillet, heat olive oil over medium heat. Add chopped onions and sauté until translucent. Add ground beef and cook until browned. Stir in taco seasoning and cook for another 2 minutes.

  2. 6

    Assemble Burritos

In a flour tortilla, spread refried beans, then add the cooked beef mixture, and sprinkle with shredded cheese. Roll tightly and place seam side down.

  3. 7

    Heat Burritos

In the same skillet, place burritos seam-side down. Cook until the tortillas are golden and the cheese is melted, about 3-4 minutes per side.

  4. 8

    Serve

Serve hot with sour cream and salsa on the side.

Rice

  1. 9

    Sauté Garlic

In a saucepan, heat olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.

  2. 10

    Cook Rice

Add long grain rice to the saucepan and stir to coat. Pour in chicken broth and bring to a boil. Reduce heat, cover, and simmer for 15-20 minutes or until rice is tender.

  3. 11

    Season

Fluff the rice with a fork and add salt to taste.

Refried Pinto Beans

  1. 12

    Sauté Onion and Garlic

In a skillet, heat olive oil over medium heat. Add chopped onion and minced garlic, cooking until softened.

  2. 13

    Cook Beans

Add drained pinto beans and cumin to the skillet. Mash the beans with a fork or potato masher until creamy. Cook for about 5 minutes, stirring occasionally.

  3. 14
