Cheese Quesadilla

Method

Cheese Quesadilla

  1. 1

    Prepare the Quesadilla

Heat olive oil in a skillet over medium heat. Place one tortilla in the skillet.

  2. 2

Sprinkle half of the shredded cheddar cheese over the tortilla and cover it with the second tortilla.

  3. 3

Cook until the bottom tortilla is golden brown, about 2-3 minutes, then carefully flip the quesadilla and cook the other side until golden and the cheese is melted, another 2-3 minutes.

  4. 4

Remove from skillet and let it cool slightly before cutting into wedges. Serve with sour cream and salsa.

Beef Burrito

  1. 5

    Cook the Beef

In a skillet over medium heat, add the ground beef and cook until browned, about 5-7 minutes.

  2. 6

Drain excess fat, then stir in taco seasoning and a splash of water. Cook for another 2 minutes.

  3. 7

    Assemble the Burrito

Warm the flour tortillas in a separate pan or microwave.

  4. 8

Spread 0.5 cup of refried beans on each tortilla.

  5. 9

Add a portion of the cooked beef, shredded lettuce, diced tomatoes, and shredded cheddar cheese.

  6. 10

    Drizzle with sour cream.

  7. 11

Fold in the sides and roll tightly to form a burrito. Serve with additional sour cream if desired.

Salad

  1. 12

    Prepare the Salad

In a large bowl, combine mixed salad greens, halved cherry tomatoes, and diced cucumber.

  2. 13

In a small bowl, whisk together olive oil, balsamic vinegar, salt, and pepper.

  3. 14

Drizzle the dressing over the salad and toss to combine. Serve immediately.
