Cook the Beef
In a large skillet, heat olive oil over medium heat. Add the diced onion and minced garlic, sautéing until the onion is translucent (about 3-4 minutes).

Add the Ground Beef
Add the ground beef to the skillet, breaking it apart with a spatula. Season with salt and black pepper to taste. Cook until the beef is browned and cooked through (about 7-10 minutes).

Add Enchilada Sauce
Once the beef is cooked, pour in the enchilada sauce, stirring to combine. Let it simmer for 5 minutes.

Assemble the Enchiladas
Preheat the oven to 350°F (175°C). In a baking dish, spread a little enchilada sauce on the bottom. Take a corn tortilla, fill it with the beef mixture and a sprinkle of cheese, roll it up and place seam-side down in the dish. Repeat with remaining tortillas.
