Beef Chile Relleno

    Prepare the Peppers

    Roast the poblano peppers over an open flame or in a broiler until the skin is charred and blistered. Place them in a sealed plastic bag for 10 minutes to steam. Then, peel off the skin and remove the seeds.

    Cook the Beef Filling

    In a skillet over medium heat, add ground beef, chopped onion, and minced garlic. Cook until the beef is browned and the onions are soft, about 5-7 minutes. Stir in cumin, salt, and black pepper. Cook for another 2 minutes.

    Stuff the Peppers

    Fill each roasted poblano pepper with the beef mixture, then top with shredded cheddar cheese.

    Bake the Rellenos

    Place the stuffed peppers in a baking dish. Pour tomato sauce over the top. Bake in a preheated oven at 375°F (190°C) for 20-25 minutes, until the cheese is melted and bubbly.

    Heat olive oil in a skillet over medium heat. Place one tortilla in the skillet, sprinkle evenly with Mexican blend cheese, and top with another tortilla. Cook until the bottom is golden and crispy, about 3-4 minutes.

    Carefully flip the quesadilla and cook the other side until it is golden and the cheese is melted, about another 2-3 minutes. Remove from skillet and repeat with remaining tortillas and cheese.
