Beef Chile Relleno

    Roast the poblano peppers on an open flame or under the broiler until the skin is charred. Place them in a plastic bag for 10 minutes to steam, then peel off the skins. Make a slit in each pepper and remove the seeds.

    In a skillet, heat 2 tablespoons of oil over medium heat. Add chopped onion and minced garlic, cooking until soft. Add the ground beef, salt, and black pepper, cooking until the beef is browned. Remove from heat and stir in the shredded cheese.

    Stuff each roasted pepper with the beef mixture and place them in a baking dish.

Beef Hard Taco
