Beef Filling

Refried Pinto Beans

Method

Beef Filling

  1. 1

    Cook the Beef

In a large skillet, over medium heat, add the ground beef and cook until browned, about 5-7 minutes.

  2. 2

    Add Vegetables and Spices

Add the chopped onion and minced garlic to the skillet. Cook until the onion is translucent, about 3-4 minutes. Stir in the chili powder, cumin, salt, and black pepper.

  3. 3

    Simmer with Water

Pour in the water, reduce the heat to low, and let it simmer for about 10 minutes until the mixture thickens slightly.

Rice

  1. 4

    Rinse the Rice

Rinse the long-grain white rice under cold water until the water runs clear.

  2. 5

    Cook the Rice

In a saucepan, combine the rinsed rice, water, and salt. Bring to a boil, then reduce the heat to low, cover, and simmer for 18-20 minutes until the rice is tender and water is absorbed.

Refried Pinto Beans

  1. 6

    Sauté Onion and Garlic

In a skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic. Sauté until softened, about 3-4 minutes.

  2. 7

    Mash the Beans

Add the pinto beans, cumin, and salt to the skillet. Using a potato masher, mash the beans to your desired consistency, cooking for about 5-7 minutes until heated through.

Burrito Assembly

  1. 8

    Warm the Tortillas

Warm the flour tortillas in a dry skillet over low heat for about 30 seconds on each side.

  2. 9

    Assemble the Burritos

On each tortilla, layer beef filling, rice, refried beans, shredded cheese, sour cream, salsa, and lettuce. Fold in the sides and roll tightly.

  3. 10

    Serve

Cut the burritos in half and serve with extra salsa and sour cream on the side.
