Searing the Beef

In a large pot, heat olive oil over medium-high heat. Add the beef chuck roast and sear on all sides until browned, about 4-5 minutes per side.

Adding Vegetables

Remove the beef and set aside. In the same pot, add the chopped onion, carrots, and garlic. Sauté until the onion is translucent, about 5 minutes.

Combining Ingredients

Return the beef to the pot. Add the potatoes, beef broth, Worcestershire sauce, bay leaves, salt, and black pepper. Stir to combine.

Simmering the Stew

Bring the mixture to a boil, then reduce the heat to low. Cover and let simmer for about 2 hours, or until the beef is tender.

Final Touches

Remove the bay leaves and adjust seasoning if necessary. Serve hot with crusty bread and a side salad.
