Prepare the Chicken
Preheat your oven to 375°F (190°C). Season the Statler chicken breasts with salt and pepper. In a large oven-safe skillet, heat 2 tablespoons of olive oil over medium-high heat. Sear the chicken for about 5-7 minutes on each side until golden brown.
Make the Persimmon Sage Glaze
In a small bowl, mash the diced persimmons with the fresh sage leaves. Add a tablespoon of olive oil and mix well. Pour this mixture over the seared chicken in the skillet.
Bake the Chicken
Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken reaches an internal temperature of 165°F (75°C).
Prepare the Garlic-Miso Greens
While the chicken is baking, heat the remaining tablespoon of olive oil in a large saucepan over medium heat. Add minced garlic and sauté for 1 minute. Stir in the greens and miso paste, cooking until the greens are wilted (about 5 minutes).
Make the Sweet Potato & Apple Hash
In another skillet, combine diced sweet potatoes and apples, seasoning with salt and pepper. Cook over medium heat for about 10-15 minutes until the sweet potatoes are tender and slightly caramelized.
Roast the Persimmons
While the hash cooks, toss any remaining diced persimmons with maple syrup and roast in the oven (on a separate tray) for about 10 minutes.
Serve
Plate the chicken with the garlic-miso greens on the side, topped with roasted persimmons and a generous serving of the sweet potato and apple hash.
