Prepare the Mussels

Rinse the mussels under cold water, scrubbing the shells to remove any debris. Remove any beards attached.

Cook the Aromatics

In a large pot, melt the unsalted butter over medium heat. Add the leeks, shallots, and minced garlic. Sauté until softened, about 5 minutes.

Make the Brodo

Stir in the vegetable broth and honey. Bring to a simmer and let it cook for 5 minutes to combine the flavors.

Add Mussels

Add the cleaned mussels to the pot. Cover and cook for 5-7 minutes, or until the mussels open up. Discard any mussels that do not open.

Season and Garnish

Season with salt and black pepper to taste. Stir in the chopped parsley just before serving.

Prepare Grilled Bread

While the mussels are cooking, grill slices of bread until toasted and golden. Serve alongside the mussels.
