Prepare the Ribs

Preheat your smoker to 225°F (107°C). Season the pork ribs with salt and black pepper on both sides.

Make the Ginger-Fig Glaze

In a saucepan, combine grated ginger, fig preserves, soy sauce, honey, and minced garlic. Cook over medium heat until the mixture is well combined and slightly thickened, about 5-7 minutes.

Smoke the Ribs

Place the seasoned ribs in the smoker and smoke for about 3 hours, or until they have a nice bark and are tender.

Baste the Ribs

During the last 30 minutes of smoking, baste the ribs with the ginger-fig glaze every 10 minutes.

Finish and Serve

Remove the ribs from the smoker and let them rest for 10 minutes. Slice the ribs into portions, top with pickled onions and toasted sesame seeds, and serve.
