Method

Preparation

  1. 1

Chop the onion, garlic, green bell pepper, and jalapeño pepper (if using) into small pieces.

Cooking

  1. 2

    Sauté the Base Ingredients

In a large pot over medium heat, add olive oil. Once hot, add chopped onion and sauté for 3-4 minutes until translucent. Add minced garlic and sauté for an additional minute.

  2. 3

    Brown the Meat

Add the ground beef to the pot, breaking it up with a spoon. Cook until browned, about 6-8 minutes.

  3. 4

    Add Vegetables and Spices

Stir in the chopped green bell pepper and jalapeño pepper (if using). Then add the chili powder, ground cumin, salt, and black pepper. Cook for another 2-3 minutes until the spices are fragrant.

  4. 5

    Incorporate Tomatoes and Beans

Pour in the canned diced tomatoes (with juices), red kidney beans, and black beans (drained and rinsed). Stir to combine everything thoroughly.

  5. 6

    Simmer the Chili

Bring the mixture to a boil, then reduce the heat to low. Cover and let it simmer for at least 30 minutes, stirring occasionally. If desired, you can simmer longer for more flavor.

  6. 7

    Adjust Seasoning

Taste the chili and adjust the seasoning with more salt, pepper, or spices as needed.

Serving Suggestions

  1. 8

Serve hot in bowls, garnished with sour cream, shredded cheddar cheese, fresh cilantro, and corn if desired.
