Calamari Preparation

Prepare the Squid
Start by cleaning the squid if it hasn't been pre-cleaned. Cut the squid bodies into rings about 1/2 inch thick.

Make the Batter
In a bowl, mix together the all-purpose flour, cornstarch, salt, black pepper, garlic powder, and paprika.

Soak the Squid
In a separate bowl, pour the buttermilk over the squid rings and let them soak for at least 30 minutes.

Coat the Squid
Remove the squid from the buttermilk, letting excess drip off, and then dredge them in the flour mixture until well coated.

Fry the Squid
Working in batches, fry the squid rings for about 2-3 minutes, or until golden brown. Remove with a slotted spoon and drain on paper towels.

Add Tomatoes and Seasonings
Stir in the canned crushed tomatoes, oregano, basil, salt, black pepper, and sugar. Bring to a simmer.

Simmer the Sauce
Reduce heat to low and let the sauce simmer for about 15-20 minutes, stirring occasionally.
