Method

Preparing the Tilapia

    Marinate the Tilapia

    In a bowl, combine olive oil, lemon juice, garlic powder, salt, and black pepper. Add tilapia fillets and coat evenly. Let marinate for 15 minutes.

    Grill the Tilapia

    Preheat the grill to medium-high heat. Grill the tilapia for 4-5 minutes on each side, or until cooked through and flaky. Remove from grill and set aside.

Making the Crawfish Étouffée

    Sauté the Vegetables

    In a large skillet, melt butter over medium heat. Add chopped onion, green bell pepper, celery, and garlic. Sauté until vegetables are softened, about 5-7 minutes.

    Add Crawfish and Seasonings

    Stir in crawfish tails, tomato paste, chicken broth, Cajun seasoning, salt, and black pepper. Simmer for about 10 minutes, stirring occasionally.

    Finish the Étouffée

    Once the sauce thickens, remove from heat and garnish with sliced green onions.

Braised Potatoes

    Prepare the Potatoes

    In a large pot, melt butter over medium heat. Add diced potatoes and sauté for 5 minutes.

    Braised the Potatoes

    Pour in chicken broth, add salt and black pepper. Bring to a boil, then reduce heat to low and cover. Cook for 20-25 minutes, or until potatoes are tender.

    Garnish the Potatoes

    Remove from heat and garnish with fresh chopped parsley before serving.

Preparing the Vegetable of the Day

    Sauté the Vegetables

    In a skillet, heat olive oil over medium heat. Add seasonal vegetables, salt, and black pepper. Sauté until tender, about 5-7 minutes.
