Method
Preparation
- 1
Prepare the Filets
Pat the filet mignon pieces dry with paper towels. This will help achieve a better sear.
- 2
Season the Filets
Sprinkle salt, black pepper, and garlic powder evenly over both sides of the filet mignon. Allow them to sit at room temperature for about 30 minutes.
- 3
Wrap the Filets
Take 3 slices of bacon per filet and carefully wrap them around each filet mignon. Secure the bacon with toothpicks if necessary.

Sear the Filets
Once the oil is hot, place the bacon-wrapped filets in the skillet. Sear for about 3-4 minutes on one side until the bacon starts to crisp.
- 6
Flip and Cook
Carefully flip the filets and sear the other side for an additional 3-4 minutes. If you prefer your steak medium-rare, aim for an internal temperature of 130°F (54°C).
- 7
Rest the Filets
Remove the filets from the skillet and let them rest for 5 minutes before serving. This allows the juices to redistribute.
