Method
Preparation of Crab Dressing
- 1
Make the Crab Dressing
In a medium bowl, combine the jumbo lump crab meat, mayonnaise, Dijon mustard, lemon juice, chopped green onions, and Old Bay seasoning. Gently fold the ingredients together until well mixed. Cover and refrigerate until ready to use.
Preparation of Voodoo Sauce
- 2
Prepare the Voodoo Sauce
In a small bowl, mix together the hot sauce, ketchup, Worcestershire sauce, garlic powder, and paprika. Stir until all ingredients are well combined. Set aside.
Grilling the Fish
- 3
Grill the Fish
Preheat your grill to medium-high heat. While the grill is heating, brush both sides of the catch of the day fillets with olive oil and season with salt and black pepper. Once the grill is hot, place the fillets on the grill and cook for about 4-5 minutes on each side, or until the fish is cooked through and flakes easily with a fork.
Assembly
- 4
Assemble the Dish
Once the fish is grilled, place each fillet on a serving plate. Top each fillet generously with the prepared crab dressing, followed by a drizzle of the voodoo sauce. Serve immediately, garnished with additional green onions if desired.
