For the Swamp Bites

    Prepare the Alligator Meat

    Rinse the alligator tail meat under cold water and pat dry with paper towels.

    Season the Meat

    Rub the alligator tail meat with blackening seasoning, salt, and black pepper until evenly coated.

    Cook the Alligator Tail

    Heat vegetable oil in a skillet over medium-high heat. Once hot, add the alligator tail meat and cook for about 3-4 minutes on each side, or until it is blackened and cooked through. Remove and let rest for a couple of minutes before cutting into bite-sized pieces.

For the Hollandaise Dipping Sauce

    Melt the Butter

    In a small saucepan, melt the butter over low heat until it's completely melted. Remove from heat and let it cool slightly.

    Whisk the Egg Yolks

    In a mixing bowl, whisk the egg yolks and lemon juice together until the mixture is pale and thick.

    Combine Ingredients

    Slowly drizzle in the melted butter while whisking continuously until the sauce is thick and creamy. Season with a pinch of salt and cayenne pepper.

    Serve

    Transfer the hollandaise sauce to a serving dish alongside the cooked swamp bites.
