Coat the shrimp
Dip each shrimp into the egg mixture, then dredge in the flour mixture until well coated.

Heat the oil
In a large pan, heat the oil over medium-high heat until hot.

Fry the shrimp
Fry the shrimp in batches until golden brown, about 2-3 minutes per side. Remove and drain on paper towels.

Add garlic and shrimp
Stir in the minced garlic and cook for an additional minute. Add the shrimp and cook until they turn pink.

Add liquids and seasonings
Stir in the tomato sauce, chicken broth, bay leaves, Cajun seasoning, salt, and black pepper. Bring to a simmer.

Thicken the sauce
Reduce the heat and let simmer gently for about 20 minutes, allowing the flavors to meld and the sauce to thicken.

Serve
Remove bay leaves. Serve the shrimp étouffée over cooked rice, garnished with sliced green onions.
