Prepare the Shrimp
Peel and devein the jumbo gulf shrimp, leaving the tails on for presentation. Rinse under cold water and pat dry with paper towels.

Prepare the Jalapeño
Slice the jalapeño in half lengthwise and remove the seeds for less heat. Cut each half into thin strips.

Prepare the Cheese
Cut the pepper jack cheese into thin strips that will fit inside the shrimp.

Stuff the Shrimp
Take each shrimp and make a small incision along the back. Insert a strip of pepper jack cheese and a piece of jalapeño into the opening.

Wrap with Bacon
Wrap each stuffed shrimp with a slice of bacon, securing the ends with a toothpick if necessary.

Cook the Shrimp
Preheat the grill or grill pan over medium-high heat. Place the bacon-wrapped shrimp on the grill and cook for about 3-4 minutes on each side, or until the shrimp are opaque and the bacon is crispy.

Remove the shrimp from the grill, let them rest for a minute, and serve warm as an appetizer or main dish.
