Prepare the Seafood
In a skillet over medium heat, add the peeled and deveined shrimp. Cook for about 3-4 minutes until they turn pink and are cooked through. Add the cooked crawfish tails and cook for an additional 2 minutes. Remove from heat and set aside.

Melt the Queso
In a small saucepan over low heat, melt the queso cheese, stirring occasionally until smooth. Remove from heat and set aside.

Layer the Nachos
On a large baking sheet or oven-safe platter, spread a layer of tortilla chips evenly across the bottom. Top with a mix of cooked shrimp and crawfish, followed by the shredded pepper jack and cheddar cheeses.

Add the Queso
Drizzle the melted queso cheese over the top of the nachos, ensuring it covers the seafood and cheeses.

Preheat the oven to 350°F (175°C). Place the loaded nachos in the oven and bake for about 10-15 minutes, or until the cheese is fully melted and bubbly.

Garnish and Serve
Once the nachos are out of the oven, top with dollops of sour cream and guacamole. Add sliced jalapeños on top for an extra kick. Serve immediately while hot.
