Cooking the Gumbo

Sauté the Vegetables
In a large pot, heat 1 tablespoon of vegetable oil over medium heat. Add the diced onion, green bell pepper, and celery. Sauté for 5-7 minutes until the vegetables are soft. Stir in the minced garlic and cook for an additional minute.

Make the Base
Add the sliced okra to the pot and cook for another 3-4 minutes. Stir in 2 tablespoons of tomato paste and cook for 2 minutes to incorporate.

Add Liquids and Seasonings
Pour in 4 cups of chicken broth, add the bay leaves, cayenne pepper, dried thyme, salt, and black pepper. Bring the mixture to a boil, then reduce to a simmer.

Add Seafood
After simmering for 30 minutes, add the shrimp and crab meat to the pot. Cook for an additional 10 minutes until the shrimp are opaque and cooked through.
Serving

Serve the Gumbo
Remove the bay leaves from the pot. Spoon the gumbo over a serving of rice. Garnish with sliced green onions before serving.
