Prepare the beans
Rinse the red kidney beans under cold water. If using dried beans, soak them overnight in water. If using canned beans, simply drain and rinse.

Chop the vegetables
Dice the onion, green bell pepper, and celery. Mince the garlic cloves.

Slice the sausage
Cut the Alabama Conecuh sausage into 1/4-inch thick slices.

Cook the sausage
In a large pot over medium heat, add the sliced sausage. Cook until browned, about 5-7 minutes. Remove and set aside.

Add the beans and seasonings
Stir in the drained beans, Cajun seasoning, bay leaves, salt, and black pepper. Mix well.

Add liquid
Pour in the chicken broth and bring to a boil.

Simmer the mixture
Reduce the heat to low, add the browned sausage back into the pot, and let simmer for about 30-40 minutes, stirring occasionally.

Cook the rice
While the beans are simmering, cook the rice according to package instructions.

Serve
Once the beans are tender and the mixture is thickened, serve the red beans over cooked rice.
