Preparation of Vegetables

    Chop the Cabbage

    Remove the outer leaves from the green and red cabbage. Cut the cabbage in half, remove the core, and thinly slice the cabbage into strips. You should have about 4 cups of shredded green cabbage and 1 cup of shredded red cabbage.

    Grate the Carrots

    Peel the carrots and use a box grater or food processor to grate them until you have 1 cup of grated carrots.

    Dice the Bell Pepper

    Wash and remove the seeds from the green bell pepper. Dice it into small pieces to yield about 0.5 cup.

Mixing and Dressing

    Combine the Vegetables

    In a large mixing bowl, combine the shredded green cabbage, shredded red cabbage, grated carrots, and diced green bell pepper. Toss them together until evenly mixed.

    Add the Dressing

    Choose one of the dressings (Bleu Cheese, 1000 Island, Ranch, Honey Mustard, Sensation, or Creamy Jalapeño Ranch) and pour 0.5 cup over the vegetable mixture. Toss the coleslaw until all the vegetables are well-coated with the dressing.

    Chill and Serve

    Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld. Serve cold.
