Preparing the Protein

    For Grilled Option

    Preheat grill to medium-high heat. Season shrimp, catfish, or chicken with Cajun seasoning, salt, and black pepper.

    For Blackened Option

    Heat a cast-iron skillet over high heat. Season the protein with Cajun seasoning. Sear each side until blackened and cooked through.

    For Fried Option

    Heat vegetable oil in a deep fryer or large pot to 350°F (175°C). Dredge shrimp or catfish in Cajun seasoning. Fry until golden brown and cooked through, about 3-4 minutes for shrimp and 5-6 minutes for catfish.

    Slice each po’boy bun in half and toast them on the grill or in a toaster until golden brown.

Assembling the Po'Boys

    Layering the Ingredients

    On the bottom half of each toasted bun, layer the cooked protein, followed by lettuce, tomatoes, onions, and pickles. Place the top half of the bun on top.
